We increasingly love to see our traditional amontillado exhibiting a thoroughly modern energy. Its crisp appearance, its sharp and intense aroma, its structured, savory and very versatile palate. Overall, a complex personality, profound and charming, ideal for many culinary occasions as well as an aperitif or to drink between meals.
Variety: 100% Pedro Ximenez.
Alcohol: 19% Vol.
Ageing: More than 10 years under 'velo de flor' (biological ageing) followed by another 10 years of oxidative ageing. All in old American oak butts, following the 'criaderas y solera' system.
Service: At room temperature, preferably in a glass of wine.
